Cabbage – ever present in supermarkets, grocery stores and farmers market – is one incredible functional food. Classified under the Crucifer family of plants, cabbage is brimming with phytochemicals. Phytochemicals – as we all know- are chemicals that check cancer cells in their own unique way.

The science behind

Cancer research scientifically proven, cabbage can decrease your chances of developing breast cancer. You won’t need to consume a ton of cabbage to avail of those cancer-fighting phytochemicals. Half a cup daily is all that’s recommended. This is easy to do. Incorporate it in your daily meals such as in your soups, stews, tacos or in your pizza to name a few. This veggie is a versatile ingredient in almost all types of cuisine.

However, a great way to get the most out of those phytochemicals is to prepare the cabbage by slicing thinly. Plus, eat it raw. Additionally, the colored variety is more loaded with phytochemicals.

Quick recipe

Here’s a quick recipe that can add punch to your meals. Eat it as a side dish to your main course. It’s quick and simple to prepare named “Creamy Coleslaw.” But don’t get on with the cream, it’s flavored with yogurt.

Creamy Coleslaw

Ingredients:
a. for the sauce
½ cup natural yogurt
2 cups Dijon mustard
2 tsps of vinegar (preferably cider, vinegar increases the salty taste)
4 tsps extra virgin olive oil
½ tsp brown sugar
½ tsp Caraway seeds, ground
½ tsp celery seeds, ground
¼ tsp sea salt
¼ tsp black pepper, ground

b. for the veggies and nuts
1/2 cups shredded cabbage, green or colored
1/2 cup shredded carrots
1/4 cup walnut
1/2 cup red bell pepper

Procedure:

1. To create a creamy texture, thoroughly mix all the ingredients for the sauce.
2. In a big bowl, put the veggies and stir in the sauce. Blend well until the veggies are well coated and mixture is uniform.
3. Serve immediately as side dish. If not eaten immediately, keep the creamy coleslaw in the fridge. It can remain fresh up to 24 hours.
4. This serves 4 people.
