Tabouleh is a salad like no other. Made with fresh veggies, olive oil and spices, it can be eaten in pita bread, scooped onto pita bread, or traditionally with a fork.

Ingredients

  • 1 cup of chopped Parsley (1 bunch)
  • 1/2 cup of chopped Mint (1 bunch)
  • 1 cup of couscous
  • 1 cup of cold water
  • 2 diced medium tomatoes
  • 1/2 diced english cucumber
  • 1 small red onion chopped
  • juice of 1 lemon
  • 3 tsp Olive Oil
  • 1tsp cumin
  • salt and pepper

Directions

  1. Pour water over the couscous. Let it sit for one hour
  2. In a large salad bowl, toss together parsley, tomatoes, mint,cucumber, onion
  3. Add the couscous
  4. In a small bowl, mix together the lemon juice, olive oil, cumin and salt and pepper
  5. Pour the dressing over the salad and toss to combine
