Tabouleh

Tabouleh is a salad like no other. Made with fresh veggies, olive oil and spices, it can be eaten in pita bread, scooped onto pita bread, or traditionally with a fork.

Ingredients
- 1 cup of chopped Parsley (1 bunch)
- 1/2 cup of chopped Mint (1 bunch)
- 1 cup of couscous
- 1 cup of cold water
- 2 diced medium tomatoes
- 1/2 diced english cucumber
- 1 small red onion chopped
- juice of 1 lemon
- 3 tsp Olive Oil
- 1tsp cumin
- salt and pepper
Directions
- Pour water over the couscous. Let it sit for one hour
- In a large salad bowl, toss together parsley, tomatoes, mint,cucumber, onion
- Add the couscous
- In a small bowl, mix together the lemon juice, olive oil, cumin and salt and pepper
- Pour the dressing over the salad and toss to combine
