Fresh Vegetables with Olive Oil

Nice and easy side dish that goes very well with grilled salmon or  grilled steak.

Ingredients

  • 2 zucchinis unpeeled, cut into small cubes
  • 3 chopped peppers (1 red, 1 yellow and 1 orange)
  • 1 chopped red onion
  • 3 rosemary branches
  • 4 teaspoons of olive oil
  • salt and pepper

Directions

Mix all vegetables in a bowl and add the olive oil.
Put the vegetables in a tray and Sprinkle the rosemary branches on them.
Roast in a 400° F oven for 30 minutes
