Nice and easy side dish that goes very well with grilled salmon or grilled steak.
- 2 zucchinis unpeeled, cut into small cubes
- 3 chopped peppers (1 red, 1 yellow and 1 orange)
- 1 chopped red onion
- 3 rosemary branches
- 4 teaspoons of olive oil
- salt and pepper
Mix all vegetables in a bowl and add the olive oil.
Put the vegetables in a tray and Sprinkle the rosemary branches on them.
Roast in a 400° F oven for 30 minutes
