Blueberry & Strawberry Honey Wheat Muffins
This muffin recipe is so versatile that you can actually replace the blueberry & strawberry by any other berries such as raspberry, blackberry or black chocolate chips.

Ingredients
- 1 cup whole wheat flour (250 ml)
- 1 cup all-purpose flour (250 ml)
- 3 tsp baking powder (15 ml)
- 1 tsp salt (5 ml)
- 1 egg
- 1 cup milk (250 ml)
- 1/4 cup vegetable oil (50 ml)
- 1/4 cup honey (50 ml)
- 1/2 cup of blueberry (fresh or frozen) (125 ml)
- 1/2 cup of strawberry (fresh or frozen) (125 ml)
Directions
- Pre-heat oven to 400 º F (200 º C)
- In a large bowl, combine whole-wheat flour, all-purpose flour, baking powder and salt. Make a well in the center.
- In another bowl, whisk together egg, milk and oil. Add the honey. Stir into flour mixture until moist and lumpy. Fold in berries
- Spoon the batter into prepared muffin tin, filling cups three-quarters full. Bake in preheated oven for 20 to 25 minutes
