Blueberry & Strawberry Honey Wheat Muffins

This muffin recipe is so versatile that you can actually replace the blueberry & strawberry by any other berries such as raspberry, blackberry or black chocolate chips.

Ingredients

  • 1 cup whole wheat flour (250 ml)
  • 1 cup all-purpose flour (250 ml)
  • 3 tsp baking powder (15 ml)
  • 1 tsp salt (5 ml)
  • 1 egg
  • 1 cup milk (250 ml)
  • 1/4 cup vegetable oil (50 ml)
  • 1/4 cup honey (50 ml)
  • 1/2 cup of blueberry (fresh or frozen) (125 ml)
  • 1/2 cup of strawberry (fresh or frozen) (125 ml)

Directions

  1. Pre-heat oven to 400 º F (200 º C)
  2. In a large bowl, combine whole-wheat flour, all-purpose flour, baking powder and salt. Make a well in the center.
  3. In another bowl, whisk together egg, milk and oil. Add the honey. Stir into flour mixture until moist and lumpy. Fold in berries
  4. Spoon the batter into prepared muffin tin, filling cups three-quarters full. Bake in preheated oven for 20 to 25 minutes
