The beetroot (Beta Vulgaris L.) contains the water soluble red pigment betanidin. It has been used as a natural food color for centuries and as a folk medicine. Betanin has been used successfully to color such products as hard candies, yogurts, ice creams, salad dressings, ready-made frostings, cake mixes, meat substitutes, powdered drink mixes, gravy mixes, marshmallow candies, soft drinks and gelatin desserts.

These are about 4 publications on beet and cancer. The most interesting observation is that the cancer chemopreventive effect was exhibited at a very low dose used in the study and thus indicating that beetroot warrants more attention for possible human applications in the control of metastatic cancer. Beet also induces apoptosis in leukemia. The antiproliferative effects of beet add further value to the nutritional characteristics. This functional foods has not been much explored, however the little knowledge is all good.

Posologie
Take 1/2 a cup of steamed beet a day. You could also keep the steamed water in the pot and drink it cold later. Since the main phytochemical is water soluble, you can added some to your soup.
